Make these easy, crispy bites featuring spinach, salty feta, and gooey melted cheese. They are perfect as an appetizer or snack.

Ingredients

Scale
  • 10 oz fresh spinach, chopped
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1/4 cup olive oil
  • 4 oz feta cheese, crumbled
  • 1 cup shredded mozzarella cheese (for melting)
  • 1/2 cup panko breadcrumbs (for coating)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
  2. If using fresh spinach, quickly blanch it in boiling water for 1 minute, then immediately transfer it to ice water. Squeeze out as much moisture as possible from the spinach and chop it finely.
  3. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  4. In a separate bowl, whisk the egg, milk, and olive oil until combined.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  6. Gently fold in the chopped spinach, crumbled feta cheese, and the shredded mozzarella cheese.
  7. Scoop tablespoon-sized amounts of the mixture and gently roll them into small balls.
  8. Roll each ball in the panko breadcrumbs until fully coated.
  9. Place the coated balls on the prepared baking sheet.
  10. Bake for 15 to 18 minutes, or until the bites are golden brown and crispy on the outside.

Notes

  • Squeezing the water from the spinach is key to keeping your bites from becoming soggy.
  • For extra crispiness, you can lightly spray the tops of the bites with cooking spray before baking.
  • Serve warm for the best melted cheese texture.
