A recipe for bell peppers filled with seasoned ground beef, cheese, and baked until tender. This dish fits a ketogenic diet.

Ingredients

Scale
  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 tablespoons keto taco seasoning (ensure no added sugar or starch)
  • 1/2 cup water
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup cream cheese, softened
  • 2 tablespoons sour cream (optional, for filling)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a baking dish.
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in the prepared baking dish.
  3. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  4. Add the ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain any excess grease.
  5. Stir in the keto taco seasoning and water. Bring the mixture to a simmer, then reduce the heat and cook for 5 minutes until the liquid reduces slightly.
  6. Remove the skillet from the heat. Stir in the shredded cheese, softened cream cheese, and sour cream (if using) until combined into the meat mixture.
  7. Spoon the taco filling evenly into the bell pepper halves.
  8. Bake for 25 to 30 minutes, or until the peppers are tender and the filling is hot throughout.
  9. Serve immediately with your preferred keto toppings like avocado or salsa.

Notes

  • To make this recipe dairy-free keto, omit the cheese and cream cheese, and add 1/4 cup of full-fat coconut cream to the filling for moisture.
  • You can prepare the filling up to two days ahead of time and store it in the refrigerator.
  • For a lower fat option, use ground turkey instead of ground beef.
