4 cups zucchini noodles (zoodles) or preferred keto pasta substitute
Instructions
Slice the chicken breasts in half horizontally to create four thinner cutlets. Season both sides with salt, pepper, and garlic powder.
Heat the olive oil and butter in a large skillet over medium-high heat.
Sear the chicken for 4 to 6 minutes per side until golden brown and cooked through (internal temperature reaches 165°F or 74°C). Remove the chicken from the skillet and set aside.
Reduce the heat to medium-low. Add the heavy whipping cream to the same skillet. Scrape up any browned bits from the bottom of the pan.
Add the cubed cream cheese to the cream. Stir constantly until the cream cheese melts completely into the cream, creating a smooth base.
Stir in the grated Parmesan cheese until the sauce is fully combined and smooth. Taste and add more salt or pepper if needed.
If the sauce is too thin, sprinkle the xanthan gum over the sauce while whisking rapidly until it thickens slightly. Do not add too much gum at once.
While the sauce finishes, quickly sauté the zucchini noodles in a separate pan for 2 to 3 minutes until slightly tender, or prepare your preferred substitute.
Slice the cooked chicken breasts. Toss the zucchini noodles directly into the Alfredo sauce in the skillet, coating them well.
Place the sliced chicken on top of the sauced noodles. Garnish with fresh parsley before serving immediately.
Notes
Use full-fat, high-quality Parmesan cheese. Check the label to confirm no added starches or sugars are present.
For extra flavor, add 2 cloves of minced fresh garlic to the pan before adding the cream.
If you do not use xanthan gum, allow the sauce to simmer gently for 5 to 8 minutes to reduce and thicken naturally.
