Ingredients
Scale
1 lb cooked, shredded chicken breast
4 oz cream cheese, softened
1/2 cup keto-friendly hot sauce (check for no added sugar)
1/4 cup blue cheese or ranch dressing (ensure low carb)
2 tablespoons butter, melted
1/4 cup water or chicken broth
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 head butter lettuce or iceberg lettuce, leaves separated and washed
Optional: 2 celery stalks, chopped, for serving
Instructions
In a medium bowl, combine the softened cream cheese, keto hot sauce, blue cheese or ranch dressing, melted butter, water or broth, garlic powder, salt, and pepper. Mix until smooth.
Add the shredded cooked chicken to the sauce mixture. Stir well until the chicken is completely coated.
Heat the mixture in a skillet over medium heat, stirring occasionally, until the filling is hot and well combined, about 5 to 7 minutes.
Taste the filling and adjust seasoning if necessary.
Spoon the warm Buffalo chicken filling into the center of each clean lettuce leaf.
Serve immediately with optional celery sticks on the side.
Notes
Use a hot sauce brand that specifically states it has zero or very low sugar content to maintain ketosis.
For extra crunch, you can mix finely chopped celery directly into the chicken filling.
If you prefer a tangier flavor, add 1 teaspoon of apple cider vinegar to the sauce mixture.
