Make tender beef and crisp broccoli in your Instant Pot with this simple, flavorful recipe for a quick weeknight dinner.

Ingredients

Scale
  • 1.5 lbs flank steak, thinly sliced against the grain
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda (for velvetizing)
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 cup beef broth
  • 1/2 cup low sodium soy sauce
  • 1/4 cup brown sugar, packed
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon ground black pepper
  • 1 pound fresh broccoli florets
  • 3 tablespoons cornstarch mixed with 3 tablespoons cold water (slurry)

Instructions

  1. In a medium bowl, toss the sliced flank steak with 1 tablespoon cornstarch, baking soda, and 1 tablespoon soy sauce. Let it sit for 15 minutes. This helps tenderize the beef.
  2. Set the Instant Pot to SAUTE mode. Add the vegetable oil. Once hot, brown the beef in batches, ensuring not to overcrowd the pot. Remove the browned beef and set aside.
  3. In the inner pot, whisk together the beef broth, 1/2 cup soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and black pepper. Scrape up any browned bits from the bottom of the pot.
  4. Return the beef to the pot. Secure the lid and set the vent to SEALING. Select MANUAL or PRESSURE COOK on HIGH for 3 minutes.
  5. When the cooking time is complete, allow a 5-minute Natural Pressure Release (NPR), then carefully quick release any remaining pressure.
  6. Remove the beef and set it aside. The liquid remaining in the pot will be the sauce base.
  7. Set the Instant Pot back to SAUTE mode (LOW). Whisk the cornstarch slurry into the sauce base. Stir constantly until the sauce thickens, about 1-2 minutes.
  8. Return the cooked beef and add the broccoli florets to the thickened sauce. Stir gently to coat everything.
  9. Secure the lid again (no need to seal the vent this time, or just leave it off if your model allows). Let the residual heat steam the broccoli for 3-5 minutes until it is tender-crisp.
  10. Serve immediately over rice or noodles.

Notes

  • For the most tender beef, slice it very thinly against the grain before seasoning.
  • Do not overcook the broccoli; adding it at the very end allows it to steam perfectly using the residual heat.
  • If you prefer a thicker sauce, add an extra teaspoon of cornstarch slurry at the end of step 8.
