Ingredients
Scale
1 cup fresh or frozen strawberries
2 tablespoons granulated sugar
1 tablespoon water
1 teaspoon vanilla extract
2 teaspoons ceremonial grade matcha powder
2 ounces hot water (about 175°F)
1 cup milk of choice (oat milk recommended)
Ice cubes
Instructions
Prepare the strawberry puree: Combine strawberries, sugar, 1 tablespoon water, and vanilla extract in a small saucepan. Heat over medium heat, stirring occasionally, until strawberries break down and the mixture thickens slightly, about 5 to 7 minutes. Mash any remaining large pieces. Remove from heat and let cool completely.
Strain the puree through a fine-mesh sieve into a bowl, pressing down on the solids to extract the liquid. Discard solids. This is your strawberry syrup.
Prepare the matcha: Sift the matcha powder into a small bowl. Add 2 ounces of hot water (not boiling). Whisk vigorously in a ‘W’ or ‘M’ motion until the matcha is smooth and frothy with no clumps.
Assemble the drink: Add 2 to 3 tablespoons of the strawberry syrup to the bottom of a tall glass. Fill the glass with ice cubes.
Pour the milk over the ice, leaving space at the top.
Gently pour the prepared matcha mixture over the milk layer. It should layer nicely on top of the milk.
Serve immediately with a straw.
Notes
Use ceremonial grade matcha for the best flavor that stands up to the sweetness of the strawberry.
If you prefer a thinner syrup, add a little more water to the strained puree.
Oat milk provides a creamy texture that pairs well with both strawberry and matcha flavors.
