Follow these steps to make a refreshing, barista-style iced lavender latte at home using homemade lavender syrup.

Ingredients

Scale
  • 1/4 cup water
  • 1/4 cup granulated sugar
  • 1 tablespoon dried culinary lavender buds
  • 2 shots espresso (about 2 ounces), cooled, or 1/2 cup strong cold brew concentrate
  • 1 cup milk (dairy, oat, or almond work well)
  • Ice cubes
  • Optional: 1 teaspoon vanilla extract

Instructions

  1. Make the lavender syrup: Combine water, sugar, and lavender buds in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Do not boil.
  2. Remove the saucepan from the heat. Let the mixture steep for 15 minutes.
  3. Strain the syrup through a fine-mesh sieve into a clean jar, discarding the lavender buds. Let the syrup cool completely. This makes about 1/3 cup of syrup.
  4. Prepare your coffee: Brew two shots of espresso or measure out your cold brew concentrate. Allow it to cool slightly.
  5. Assemble the latte: Add 1 to 2 tablespoons of the cooled lavender syrup (adjust to your sweetness preference) to the bottom of a tall glass.
  6. Add ice cubes to the glass, filling it about three-quarters full.
  7. Pour the cooled espresso or cold brew over the ice.
  8. Slowly pour the milk over the coffee mixture.
  9. Serve immediately. Stir before drinking to combine the layers.

Notes

  • For a dairy-free option, oat milk provides the creamiest texture.
  • If you prefer a less floral taste, use only 1/2 tablespoon of lavender buds when making the syrup.
  • You can make the lavender syrup up to one week ahead and store it in the refrigerator.
  • For a caffeine-free version, substitute the espresso with strongly brewed, chilled herbal tea, such as chamomile.
