Ingredients
Scale
1 pound cooked shrimp, peeled and chopped
8 ounces cream cheese, softened
1 cup sour cream
1 cup shredded Monterey Jack cheese
1/2 cup shredded sharp cheddar cheese
1/2 cup mayonnaise
1/2 cup finely diced pickled jalapenos, drained
2 tablespoons finely diced fresh jalapeno (optional, for extra heat)
4 slices bacon, cooked and crumbled
2 green onions, thinly sliced
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup panko breadcrumbs (for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish or a similar sized oven-safe skillet.
In a large bowl, combine the softened cream cheese, sour cream, mayonnaise, Monterey Jack cheese, cheddar cheese, garlic powder, salt, and pepper. Mix until smooth and well combined.
Gently fold in the chopped cooked shrimp, diced pickled jalapenos, fresh jalapenos (if using), and half of the crumbled bacon.
Spread the mixture evenly into the prepared baking dish.
Sprinkle the top evenly with the panko breadcrumbs and the remaining crumbled bacon.
Bake for 20 to 25 minutes, or until the dip is hot throughout and the topping is golden brown.
Garnish with sliced green onions before serving.
Serve immediately with tortilla chips, crackers, or vegetable sticks.
Notes
For milder heat, use only pickled jalapenos and remove all seeds and membranes before dicing.
If you prefer a smoother texture, use canned or frozen cooked shrimp that you have thawed and chopped.
You can substitute cream cheese with Neufchatel cheese for a slightly lighter dip.
