Make sticky, spicy, and sweet chicken wings crispy in the oven without deep frying. This recipe focuses on achieving a perfect crisp texture with a simple honey sriracha glaze.

Ingredients

Scale
  • 2 lbs chicken wings, separated into flats and drumettes
  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup honey
  • 1/4 cup sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with aluminum foil and place a wire rack on top of the foil.
  2. Pat the chicken wings completely dry using paper towels. This step is essential for crispiness.
  3. In a medium bowl, toss the dry wings with baking powder, salt, and pepper until evenly coated.
  4. Arrange the wings in a single layer on the wire rack, ensuring they do not touch.
  5. Bake for 25 minutes.
  6. While the wings bake, prepare the glaze: Whisk together honey, sriracha, soy sauce, rice vinegar, and sesame oil in a small saucepan. Heat over medium-low heat until just simmering, then remove from heat.
  7. After 25 minutes, flip the wings over. Return them to the oven and bake for another 20 to 25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit and the skin is golden brown and crisp.
  8. Remove the wings from the oven. Place them in a large bowl. Pour the warm honey sriracha glaze over the wings and toss gently until every piece is coated.
  9. Serve immediately.

Notes

  • Do not skip the baking powder; it helps dry out the skin and promotes crisping.
  • For extra crispiness, you can place the wings under the broiler for the last 1 to 2 minutes, watching closely to prevent burning.
  • If you prefer a thicker glaze, simmer the sauce mixture for an extra minute or two until it reduces slightly.
