Ingredients
Scale
1 pound large sea scallops, patted dry
12 slices thin-cut bacon, halved lengthwise
2 tablespoons honey
1 tablespoon Sriracha sauce
1 teaspoon soy sauce
1/4 teaspoon black pepper
Instructions
If using frozen scallops, thaw them completely and pat them very dry with paper towels.
Preheat your oven to 400°F (200°C) or set your air fryer to 380°F (195°C). Line a baking sheet with parchment paper or use a wire rack set over the sheet.
In a small bowl, whisk together the honey, Sriracha, soy sauce, and black pepper to create the glaze.
Take one half-slice of bacon and wrap it tightly around the center of one scallop. Secure the bacon with a toothpick if necessary. Repeat with the remaining scallops.
Brush the tops and sides of the wrapped scallops lightly with half of the honey sriracha glaze.
For Oven Baking: Place the scallops on the prepared baking sheet. Bake for 15 to 18 minutes, flipping halfway through, until the bacon is crisp and the scallops are opaque.
For Air Frying: Place the scallops in the air fryer basket in a single layer, ensuring they do not touch. Cook for 9 to 12 minutes, flipping halfway, until the bacon is crisp.
During the last 2 minutes of cooking, brush the remaining glaze over the scallops.
Remove from heat and let them rest for 2 minutes before serving. Remove toothpicks before serving.
Notes
Select dry-packed scallops for the best texture; wet-packed scallops release too much water during cooking.
To get tight bacon wraps, use thin-cut bacon and secure the ends firmly.
If you prefer a thicker glaze, reduce the honey and Sriracha mixture slightly on the stovetop before brushing.
For a main course, serve these with rice or a simple green salad.
