Ingredients
Scale
1 lb large shrimp, peeled and deveined
1 cup uncooked white rice (Jasmine recommended)
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 cup soy sauce (low sodium preferred)
1/4 cup honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/2 teaspoon cornstarch mixed with 1 teaspoon cold water (slurry)
1 cup broccoli florets
1/2 cup sliced carrots
2 green onions, sliced for garnish
1 teaspoon sesame seeds for garnish
Instructions
Cook the rice according to package directions. Keep warm.
In a small bowl, whisk together the soy sauce, honey, rice vinegar, and sesame oil to make the sauce base. Set aside.
Heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and grated ginger. Cook for 30 seconds until fragrant.
Add the shrimp to the skillet in a single layer. Cook for 1-2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
Add the broccoli florets and carrots to the same skillet. Stir fry for 3-4 minutes until slightly tender-crisp.
Pour the prepared honey soy sauce base into the skillet with the vegetables. Bring to a simmer.
Whisk the cornstarch slurry again and pour it into the simmering sauce. Stir constantly until the sauce thickens, about 1 minute.
Return the cooked shrimp to the skillet. Toss gently to coat the shrimp and vegetables in the glaze. Cook for 1 minute to heat through.
Assemble your bowls: Divide the cooked rice among serving bowls. Top with the honey soy shrimp and vegetable mixture.
Garnish with sliced green onions and sesame seeds before serving.
Notes
For meal prepping, store the shrimp and vegetable mixture separately from the rice to prevent the rice from becoming soggy. Reheat gently before serving.
If you prefer a spicier flavor, add 1/4 teaspoon of red pepper flakes to the sauce base.
Use Jasmine rice for an authentic Asian flavor profile in your bowl.
