A sweet and tangy chicken salad featuring cooked chicken, grapes, and a homemade honey mustard dressing, suitable for sandwiches or light meals.

Ingredients

Scale
  • 2 cups cooked, shredded chicken breast
  • 1 cup red or green seedless grapes, halved
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped celery (optional)
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Place the shredded chicken in a medium mixing bowl.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, honey, apple cider vinegar, salt, and pepper until the dressing is smooth.
  3. Pour the honey mustard dressing over the shredded chicken. Mix gently until the chicken is evenly coated.
  4. Fold in the halved grapes and any optional additions like celery or nuts.
  5. Cover the bowl and chill the chicken salad in the refrigerator for at least 30 minutes before serving to allow the flavors to combine.
  6. Serve the salad on lettuce leaves, crackers, or bread for sandwiches.

Notes

  • Use rotisserie chicken for quick preparation.
  • For a lighter salad, substitute half of the mayonnaise with plain Greek yogurt.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • If you prefer a tangier dressing, increase the amount of Dijon mustard slightly.
