A simple recipe for making sweet and spicy chicken using honey and harissa paste, cooked on a single sheet pan with vegetables.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 3 tablespoons harissa paste
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large sweet potato, peeled and cubed
  • 1 red onion, cut into wedges
  • 1 cup broccoli florets

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together the olive oil, harissa paste, honey, lemon juice, cumin, salt, and pepper to create the glaze.
  3. Place the chicken, sweet potato, and red onion on the prepared baking sheet. Toss them lightly with half of the harissa glaze.
  4. Arrange the chicken and vegetables in a single layer on the pan.
  5. Roast for 15 minutes.
  6. Remove the pan from the oven. Add the broccoli florets to the pan and toss everything gently. Brush the remaining harissa glaze over the chicken pieces.
  7. Return the pan to the oven and roast for another 10 to 15 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the vegetables are tender.
  8. Serve immediately.

Notes

  • To adjust the spice level, start with 2 tablespoons of harissa paste and add more to the glaze if you prefer more heat.
  • You can substitute the vegetables with bell peppers or carrots based on what you have available.
  • If you use chicken breasts, cut them into uniform 1-inch thick pieces to ensure even cooking time with the vegetables.
