Ingredients
Scale
1 lb large shrimp, peeled and deveined
1 cup uncooked white rice
1 cup water
1/2 cup coconut milk (canned, full fat or light)
1 head broccoli, cut into florets
2 tablespoons olive oil
4 cloves garlic, minced
1/4 cup honey
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Instructions
Cook the rice: Combine rice, water, and coconut milk in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until liquid is absorbed. Keep covered off heat.
Steam the broccoli: Place broccoli florets in a steamer basket over boiling water. Steam for 4 to 6 minutes until tender-crisp. Set aside.
Make the sauce: In a small bowl, whisk together honey, soy sauce, rice vinegar, ginger, and red pepper flakes if using.
Cook the shrimp: Heat olive oil in a large skillet over medium-high heat. Season shrimp lightly with salt and pepper. Add shrimp to the skillet and cook for 1 to 2 minutes per side until pink.
Glaze the shrimp: Pour the honey garlic sauce over the shrimp. Cook for 1 to 2 minutes, stirring constantly, until the sauce thickens and coats the shrimp evenly. Do not overcook the shrimp.
Assemble the bowls: Divide the coconut rice among serving bowls. Top with the honey garlic shrimp and steamed broccoli. Serve immediately.
Notes
For quicker cooking, use pre-cooked or frozen shrimp that has been fully thawed.
You can substitute brown rice, but adjust the cooking time according to package directions.
Garnish with sesame seeds or chopped green onions if desired.
