Make quick, flavorful salmon bites coated in a sticky honey garlic glaze that caramelizes beautifully when cooked.

Ingredients

Scale
  • 1.5 lbs salmon fillet, skin removed, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon grated fresh ginger

Instructions

  1. Pat the salmon cubes dry with paper towels and season lightly with salt and pepper.
  2. In a small bowl, whisk together the honey, minced garlic, soy sauce, apple cider vinegar, and ginger to make the glaze. Set aside half of the glaze for later use.
  3. Heat the olive oil in a large non-stick skillet over medium-high heat until shimmering.
  4. Add the salmon cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan; cook in batches if necessary.
  5. Sear the salmon for 2-3 minutes per side until lightly golden.
  6. Pour the reserved half of the glaze over the salmon in the skillet. Let it bubble and cook for 1 minute, stirring gently to coat the pieces.
  7. Continue cooking for another 1-2 minutes until the glaze thickens and the edges of the salmon start to caramelize.
  8. Remove the skillet from the heat. Drizzle the remaining fresh glaze over the hot salmon bites before serving immediately.

Notes

  • For extra caramelization, you can briefly place the skillet under a preheated broiler for 1 minute after glazing, watching carefully to prevent burning.
  • If you prefer an air fryer method, toss the salmon cubes with the initial glaze mixture (not the reserved half) and air fry at 400°F (200°C) for 8-10 minutes, brushing with the remaining glaze halfway through cooking.
  • Garnish with chopped green onions or sesame seeds for color and texture.
