Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 cup brown rice, uncooked
2 cups water (for rice)
1 head broccoli, cut into florets
1 red bell pepper, sliced
1 cup snow peas
1/2 cup honey
1/4 cup low-sodium soy sauce
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon cornstarch
2 tablespoons water (for slurry)
Instructions
Cook the brown rice according to package directions using 2 cups of water. Set aside.
In a small bowl, whisk together the honey, soy sauce, minced garlic, and grated ginger. Set aside half of this mixture for glazing later.
In the remaining half of the sauce, whisk in the cornstarch and 2 tablespoons of water to create a slurry.
Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
Add the broccoli florets and sliced red bell pepper to the same skillet. Stir-fry for 3 minutes until slightly tender-crisp. Add the snow peas and cook for 1 more minute.
Return the cooked chicken to the skillet with the vegetables. Pour the cornstarch-thickened sauce mixture over the chicken and vegetables. Toss everything to coat well. Cook for 1-2 minutes until the sauce thickens into a glaze.
Stir in the reserved, unthickened half of the honey garlic sauce for extra flavor.
To assemble the bowls, divide the cooked brown rice among serving bowls. Top with the glazed chicken and vegetable mixture.
Notes
For a thicker glaze, increase the cornstarch to 1.5 teaspoons.
You can substitute brown rice with cauliflower rice for a lower carbohydrate option.
Use chicken thighs instead of breasts if you prefer a richer flavor.
