Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch bites
1 tablespoon olive oil
1/2 cup honey
1/4 cup soy sauce
2 tablespoons rice vinegar
4 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 teaspoon red pepper flakes (optional)
1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
3 cups cooked white or brown rice
1 cup steamed broccoli florets (for serving)
2 green onions, sliced (for garnish)
Instructions
Season the chicken bites lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken bites and cook until browned on all sides and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, reduce the heat to medium. Add the honey, soy sauce, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). Bring the mixture to a gentle simmer.
Whisk the cornstarch slurry again and pour it slowly into the simmering sauce, stirring constantly until the sauce thickens to a glaze consistency, about 1 minute.
Return the cooked chicken bites to the skillet. Toss gently until every piece is evenly coated with the sticky honey garlic sauce.
To assemble the bowls, divide the cooked rice among serving bowls. Top the rice with the honey garlic chicken bites and steamed broccoli.
Garnish with sliced green onions before serving immediately.
Notes
For crispier chicken, lightly dust the raw chicken bites in cornstarch before searing them in the oil.
You can substitute chicken thighs for breasts if you prefer a richer flavor.
Add shredded carrots or snap peas to the bowl for extra vegetables.
