Make a flavorful strawberry lemonade concentrate that you can store in the refrigerator or freezer for quick drinks later.

Ingredients

Scale
  • 3 cups fresh strawberries, hulled and halved
  • 1 cup fresh lemon juice (about 5-6 lemons)
  • 1 tablespoon lemon zest
  • 2 cups granulated sugar
  • 1 cup water

Instructions

  1. Combine the strawberries, sugar, and water in a medium saucepan.
  2. Heat the mixture over medium heat, stirring until the sugar dissolves completely.
  3. Bring the mixture to a simmer and cook for 10 minutes, stirring occasionally, until the strawberries soften.
  4. Remove the saucepan from the heat. Use a potato masher or immersion blender to crush the strawberries until you have a thick puree.
  5. Stir in the fresh lemon juice and lemon zest.
  6. Strain the mixture through a fine-mesh sieve into a bowl, pressing down on the solids to extract all the liquid. Discard the solids.
  7. Let the concentrate cool completely to room temperature.
  8. Transfer the cooled concentrate to clean, airtight containers.

Notes

  • For refrigeration, store the concentrate in the refrigerator for up to 2 weeks.
  • For freezing, pour the concentrate into freezer-safe bags or containers, leaving about 1 inch of headspace. Freeze for up to 6 months.
  • To serve, mix 1 part concentrate with 2 to 3 parts cold water, depending on your preferred strength. Start with 1 part concentrate to 2 parts water and adjust.
  • If serving frozen concentrate, thaw it completely in the refrigerator before diluting.
