Ingredients
Scale
2 lbs ground beef (80/20 recommended)
1 cup breadcrumbs
1/2 cup milk
1 large egg, lightly beaten
1/2 cup finely chopped onion
1/4 cup ketchup (for the mix)
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup balsamic vinegar (for glaze)
2 tablespoons brown sugar (for glaze)
1 tablespoon water (for glaze)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking sheet.
In a large bowl, combine the breadcrumbs and milk. Let stand for 5 minutes to allow the breadcrumbs to soak up the liquid.
Add the ground beef, chopped onion, 1/4 cup ketchup, Worcestershire sauce, salt, and pepper to the breadcrumb mixture. Mix gently with your hands until just combined. Do not overmix.
Shape the meat mixture into a heart shape directly on the prepared baking sheet. You can free-form the shape or use a heart-shaped cookie cutter as a guide. Aim for a thickness of about 1.5 inches.
Bake the meatloaf for 45 minutes.
While the meatloaf bakes, prepare the glaze: In a small saucepan, combine the balsamic vinegar, brown sugar, and water. Bring the mixture to a simmer over medium heat. Reduce the heat to low and let it cook, stirring occasionally, until the mixture thickens enough to coat the back of a spoon (about 5 to 8 minutes). This is your balsamic glaze.
After 45 minutes of baking, brush half of the balsamic glaze evenly over the top of the meatloaf.
Return the meatloaf to the oven and bake for another 15 to 20 minutes, or until an internal temperature of 160 degrees Fahrenheit is reached.
Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Drizzle the remaining glaze over the rested meatloaf before serving.
Notes
To help the heart shape hold, chill the formed meatloaf for 15 minutes before baking.
For a sweeter glaze, add 1 teaspoon of maple syrup along with the brown sugar.
If you do not have a baking sheet, you can use a loaf pan, but shaping it free-hand on a sheet allows for a better heart outline.
