A lean ground turkey meatloaf recipe featuring spinach for added nutrition. This recipe focuses on keeping the meatloaf moist and flavorful without excess fat.

Ingredients

Scale
  • 1.5 lbs lean ground turkey (93% lean or higher)
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped carrot
  • 1/2 cup rolled oats (quick or old-fashioned, used as binder)
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup ketchup (for glaze)
  • 1 tablespoon brown sugar (for glaze)
  • 1 teaspoon apple cider vinegar (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper.
  2. In a large bowl, combine the ground turkey, chopped spinach, onion, carrot, rolled oats, egg, garlic, Worcestershire sauce, thyme, salt, and pepper.
  3. Mix the ingredients gently with your hands until just combined. Do not overmix, as this can make the meatloaf tough.
  4. Shape the mixture into an oval loaf shape directly onto the prepared baking sheet or in a loaf pan.
  5. In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar for the glaze. Spread this mixture evenly over the top of the meatloaf.
  6. Bake for 45 to 55 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.

Notes

  • Using rolled oats instead of breadcrumbs helps absorb moisture and keeps the meatloaf tender while adding fiber.
  • For an extra moist result, you can mix 1 tablespoon of olive oil into the meat mixture.
  • If you prefer a thicker glaze, increase the brown sugar slightly.
