- 1 pre-made pizza crust (12 inch)
- 6 large eggs
- 1/2 cup milk
- 1 cup fresh spinach, packed
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1 cup diced cooked ham
- 2 tablespoons butter or oil
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a pizza pan or baking sheet.
- Prepare the green eggs: Place the spinach, eggs, milk, salt, and pepper into a blender. Blend until the mixture is smooth and uniformly green.
- Melt the butter or oil in a large non-stick skillet over medium heat. Pour the green egg mixture into the skillet.
- Scramble the eggs gently until they are mostly set but still slightly wet. Remove from heat immediately.
- Place the pizza crust on the prepared pan.
- Spread the green eggs evenly over the pizza crust, leaving a small border for the edge.
- Sprinkle the shredded mozzarella cheese over the eggs.
- Distribute the diced ham evenly over the cheese layer.
- Bake for 10 to 14 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
- Slice and serve immediately.
Notes
- You can use store-bought pizza dough and pre-bake it for 5 minutes before adding toppings if you prefer a crispier crust.
- For a stronger green color, add a few drops of green food coloring to the egg mixture.
- Use leftover holiday ham or Canadian bacon for the meat component.
