Ingredients
Scale
12 whole wheat pita breads
3 tablespoons olive oil, divided
1 teaspoon dried oregano, divided
1/2 teaspoon salt, divided
2 cups cooked, shredded chicken breast
1/2 cup lemon juice
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 cup crumbled feta cheese
1/2 cup Kalamata olives, halved
1/2 cup chopped red onion
1/2 cup chopped tomato
1 cup tzatziki sauce (see notes for quick recipe)
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375 degrees F. Prepare the pita chips: Cut pita breads into 8 wedges each. Toss the wedges with 2 tablespoons of olive oil, 1/2 teaspoon oregano, and 1/4 teaspoon salt. Spread them in a single layer on two baking sheets.
Bake the pita chips for 8 to 12 minutes, flipping halfway through, until golden brown and crisp. Set aside.
Prepare the chicken seasoning: In a medium bowl, combine the shredded chicken, lemon juice, 2 tablespoons olive oil, 1 teaspoon oregano, garlic powder, and pepper. Mix well to coat the chicken evenly.
Assemble the nachos: Spread the baked pita chips onto a large, oven-safe platter or baking sheet.
Distribute the seasoned chicken evenly over the pita chips.
Sprinkle the feta cheese, Kalamata olives, red onion, and tomato over the chicken layer.
Bake for 5 to 7 minutes, or until the feta is slightly softened and the toppings are warm.
Remove from the oven. Drizzle generously with tzatziki sauce.
Garnish with fresh parsley before serving.
Notes
For a quick tzatziki sauce: Mix 1 cup plain Greek yogurt, 1/4 cup grated cucumber (squeezed dry), 1 clove minced garlic, 1 tablespoon lemon juice, and a pinch of salt and pepper. Chill before serving.
You can use store-bought pita chips if you prefer to skip the baking step.
For extra flavor, toss the cooked chicken with 1 teaspoon of smoked paprika before assembling.
If you want melted cheese, add a layer of shredded mozzarella or Monterey Jack under the feta before the final bake.
