Ingredients
Scale
3 cups cold mashed potatoes
1 cup shredded sharp cheddar cheese
1 large egg, lightly beaten
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1 cup breadcrumbs (Panko recommended for crispness)
Vegetable oil, for frying (about 2 inches deep)
Instructions
In a large bowl, combine the cold mashed potatoes, shredded cheddar cheese, beaten egg, flour, salt, pepper, and garlic powder. Mix until just combined; do not overmix.
Place the breadcrumbs in a shallow dish.
Scoop the potato mixture using a tablespoon or small cookie scoop. Roll the mixture gently between your palms to form small balls, about 1 inch in diameter.
Roll each potato ball thoroughly in the breadcrumbs until fully coated. Press lightly so the crumbs adhere well.
Heat the vegetable oil in a deep, heavy-bottomed pot or deep fryer to 350°F (175°C).
Carefully place 4 to 5 potato puffs into the hot oil, ensuring you do not overcrowd the pot.
Fry for 3 to 4 minutes, turning occasionally, until the puffs are deep golden brown and heated through.
Remove the puffs with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
Serve immediately while hot and crispy.
Notes
Use cold mashed potatoes; warm potatoes will make the mixture too soft to handle.
For an air fryer method, spray the coated puffs lightly with cooking spray and cook at 380°F (195°C) for 10 to 12 minutes, flipping halfway through, until golden.
For extra flavor, add 1/4 cup of finely chopped chives or green onions to the potato mixture.
