Ingredients
Scale
1.5 lbs carrots, peeled and cut into 1-inch pieces
3 tablespoons unsalted butter, melted
3 tablespoons honey
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Place the cut carrots on the prepared baking sheet.
In a small bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until well combined. This is your glaze mixture.
Pour half of the glaze mixture over the carrots and toss them thoroughly until they are evenly coated.
Spread the carrots in a single layer on the baking sheet.
Roast for 15 minutes.
Remove the carrots from the oven and drizzle the remaining glaze mixture over them. Toss gently to recoat.
Return the carrots to the oven and roast for another 10 to 15 minutes, or until the carrots are tender when pierced with a fork and the glaze has caramelized slightly.
Remove from the oven, sprinkle with fresh parsley, and serve immediately.
Notes
For a softer interior, you can blanch the carrots in boiling water for 3 minutes before tossing them with the glaze and roasting.
If you prefer a thicker glaze, reduce the honey slightly or cook the glaze mixture on the stovetop for 1 minute before adding the garlic.
You can substitute baby carrots for fresh-cut carrots; reduce the total roasting time by about 5 minutes.
