Ingredients
Scale
1 pound large sea scallops, patted very dry
12 thin slices of bacon
2 tablespoons unsalted butter, melted
2 cloves garlic, minced
1 teaspoon dried parsley
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
Pinch of salt
12 toothpicks, soaked in water for 10 minutes
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper or aluminum foil.
In a small bowl, combine the melted butter, minced garlic, parsley, thyme, pepper, and salt. Mix well.
Gently brush the garlic herb butter mixture over the tops and sides of the dried scallops.
Take one slice of bacon and wrap it tightly around the middle of each seasoned scallop. Secure the bacon with a soaked toothpick inserted through the bacon and scallop.
Place the wrapped scallops seam-side down on the prepared baking sheet.
Bake for 15 to 20 minutes, or until the bacon is crisp and the scallops are opaque throughout. Cooking time depends on the size of your scallops.
For extra crispiness, you can briefly broil for the last 1-2 minutes, watching closely to prevent burning.
Remove the toothpicks before serving.
Notes
Use large sea scallops for the best results when wrapping with bacon. Patting the scallops completely dry before seasoning helps them sear better and prevents a soggy result.
If you prefer a pan-seared finish, cook the wrapped scallops in a cast-iron skillet over medium heat, turning frequently until the bacon is crisp, about 8-10 minutes.
For a party, serve these immediately with a side of lemon wedges.
