Ingredients
Scale
1.5 lbs sirloin or ribeye steak, cut into 1-inch cubes
1 tablespoon olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh parsley, chopped (for sauce)
2 tablespoons fresh cilantro, chopped (for sauce)
1 tablespoon fresh oregano, chopped (for sauce)
1/4 cup olive oil (for sauce)
2 tablespoons red wine vinegar (for sauce)
1/2 teaspoon red pepper flakes (for sauce)
Instructions
Prepare the herb sauce: Combine parsley, cilantro, oregano, 1/4 cup olive oil, red wine vinegar, and red pepper flakes in a small bowl. Mix well and set aside to allow flavors to meld.
Pat the steak cubes dry with paper towels. Season evenly with salt and pepper.
Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil. When the oil shimmers, add half of the steak cubes in a single layer, ensuring not to overcrowd the pan.
Sear the steak for 2-3 minutes per side until browned. Remove the first batch and set aside. Repeat with the remaining steak.
Reduce the heat to medium. Add the butter and minced garlic to the skillet. Cook for about 1 minute until the butter is melted and the garlic is fragrant, being careful not to burn the garlic.
Return all the steak bites to the skillet. Toss quickly to coat them in the garlic butter sauce, cooking for 30 seconds to 1 minute until the steak reaches your desired doneness (medium-rare is recommended).
Remove the skillet from the heat immediately. Serve the steak bites hot, drizzled with the fresh herb sauce.
Notes
For the juiciest results, use steak at room temperature before searing.
Do not move the steak until a good crust forms on the first side.
Serve these steak bites over mashed potatoes or alongside roasted asparagus for a complete meal.
