Make tender steak bites with a deeply browned, crispy exterior using a hot skillet and rich garlic butter sauce.

Ingredients

Scale
  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pat the steak cubes completely dry using paper towels. Season the steak cubes evenly with salt and pepper.
  2. Place a large, heavy-bottomed skillet (cast iron works best) over high heat. Add the olive oil. Wait until the oil just begins to smoke slightly.
  3. Add half of the steak cubes to the hot skillet, ensuring they do not touch each other. This prevents steaming and promotes crisping.
  4. Sear the steak for 2 to 3 minutes without moving them until a deep brown crust forms on the bottom.
  5. Flip the steak pieces and sear the other side for 1 to 2 minutes for medium-rare. Remove the first batch of steak from the skillet and set aside.
  6. Repeat the searing process with the remaining steak cubes.
  7. Reduce the heat to medium. Add the butter to the skillet. Let it melt completely.
  8. Add the minced garlic and thyme to the melted butter. Cook for about 30 to 60 seconds until the garlic is fragrant. Do not let the garlic burn.
  9. Return all the cooked steak bites to the skillet. Toss quickly to coat them in the garlic butter sauce. Cook for 30 seconds.
  10. Remove the skillet from the heat. Stir in the fresh parsley. Serve immediately.

Notes

  • Use a cut like sirloin or ribeye for the best texture.
  • For the crispiest edges, cook the steak in batches; overcrowding the pan lowers the temperature and causes the meat to steam instead of sear.
  • If you prefer a saucier finish, increase the butter to 8 tablespoons and add 1 tablespoon of beef broth after the garlic is fragrant.
