Ingredients
Scale
1 tablespoon olive oil
1 pound large shrimp, peeled and deveined
1/2 teaspoon salt
1/4 teaspoon black pepper
4 tablespoons unsalted butter, divided
4 cloves garlic, minced
1/2 cup chicken broth
1 cup uncooked long-grain white rice
1/2 cup water
1/4 cup heavy cream (optional, for creaminess)
1 tablespoon fresh lemon juice
2 tablespoons fresh parsley, chopped
Instructions
Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Season the shrimp with salt and pepper. Add the shrimp to the skillet and cook for 1 to 2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
Reduce the heat to medium. Add the remaining 3 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic brown.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
Stir in the uncooked rice, water, and heavy cream (if using). Bring the mixture to a simmer.
Cover the skillet tightly, reduce the heat to low, and cook for 15 to 18 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
Remove the skillet from the heat. Let it stand, covered, for 5 minutes.
Fluff the rice gently with a fork. Stir in the lemon juice.
Return the cooked shrimp to the skillet and stir gently to combine and reheat.
Sprinkle with fresh parsley before serving.
Notes
For perfectly cooked shrimp, avoid overcooking; they cook very quickly.
If you prefer to use pre-cooked rice, skip steps 4 through 7. Instead, simmer the broth, water, and seasonings for 5 minutes, then stir in the pre-cooked rice, shrimp, and cream, heating through for 3 minutes before adding the lemon juice and parsley.
Add 1 cup of fresh spinach during the last 2 minutes of the rice cooking time for added greens.
