Ingredients
Scale
4 (6 ounce) salmon fillets, skin on or off
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped
Instructions
Pat the salmon fillets very dry using paper towels. This step is crucial for crispy edges. Season both sides with salt and pepper.
Heat the olive oil in a large, oven-safe skillet (cast iron works best) over medium-high heat until it shimmers.
Place the salmon fillets skin-side down in the hot skillet. Sear undisturbed for 4 to 5 minutes until the skin is golden brown and crispy.
Reduce the heat to medium-low. Flip the salmon fillets carefully.
Add the butter and minced garlic to the skillet around the salmon. Let the butter melt and foam.
Baste the salmon continuously with the melted garlic butter for 1 to 2 minutes.
Transfer the entire skillet to a preheated oven at 400 degrees Fahrenheit (200 Celsius). Bake for 4 to 6 minutes, or until the salmon reaches your desired doneness (internal temperature of 145 degrees Fahrenheit).
Remove from the oven. Drizzle with fresh lemon juice and sprinkle with chopped parsley before serving immediately.
Notes
For extra crispy edges when using skinless fillets, cook them entirely on the stovetop, basting frequently, until the bottom develops a crust.
If your fillets are very thick, finish them under the broiler for the last minute to ensure the top cooks through without overcooking the bottom.
Use fresh garlic for the best flavor in the butter sauce.
