Ingredients
Scale
1.5 lb salmon fillet, skin removed and cut into 1-inch cubes
1 cup uncooked jasmine rice
2 cups water or chicken broth
1 tbsp olive oil
1 bunch asparagus, trimmed
4 tbsp unsalted butter
4 cloves garlic, minced
1/4 cup fresh lemon juice
1 tsp dried Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
2 tbsp fresh parsley, chopped (for garnish)
Instructions
Cook the rice: Combine rice and water or broth in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
Preheat your oven to 400°F (200°C).
Toss the trimmed asparagus with 1 tsp olive oil, salt, and pepper on a baking sheet. Roast for 10-12 minutes until tender-crisp.
While asparagus roasts, prepare the salmon: In a medium bowl, toss the salmon cubes with 1/4 tsp salt and 1/8 tsp pepper.
Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the salmon cubes in a single layer. Sear for 2-3 minutes per side until lightly browned. Remove salmon from the skillet and set aside.
Make the garlic butter sauce: Reduce the heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
Stir in the lemon juice and Italian seasoning. Simmer for 1 minute.
Return the seared salmon bites to the skillet. Toss gently to coat them completely in the garlic butter sauce. Cook for 1-2 minutes until the salmon is cooked through (internal temperature of 145°F).
Assemble the bowls: Divide the cooked rice among four bowls. Top with roasted asparagus and the garlic butter salmon bites.
Drizzle any remaining sauce from the skillet over the salmon and rice. Garnish with fresh parsley.
Notes
For a quicker meal, use pre-cooked microwaveable rice instead of cooking it from scratch.
If you prefer a crispier salmon texture, you can air fry the seasoned salmon cubes at 380°F for 8-10 minutes, then toss with the prepared garlic butter sauce.
Add sliced avocado or a sprinkle of sesame seeds for extra texture.
