A simple recipe for tender and flavorful asparagus and mushrooms roasted with garlic butter.

Ingredients

Scale
  • 1 pound fresh asparagus, trimmed
  • 8 ounces cremini mushrooms, cleaned and halved or quartered
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice (optional)
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, combine the melted butter and minced garlic. Mix well.
  3. Place the trimmed asparagus and prepared mushrooms onto the baking sheet.
  4. Pour the garlic butter mixture evenly over the vegetables. Toss gently with your hands or tongs until everything is coated.
  5. Spread the vegetables into a single layer on the baking sheet. Do not overcrowd the pan; use two sheets if necessary for proper roasting.
  6. Sprinkle the salt and pepper over the vegetables.
  7. Roast for 12 to 15 minutes. The asparagus should be tender-crisp, and the mushrooms should be lightly browned.
  8. Remove the pan from the oven. If using, drizzle with fresh lemon juice and sprinkle with Parmesan cheese. Toss lightly.
  9. Serve immediately.

Notes

  • For tender yet slightly crisp vegetables, do not overcook. Check them starting at 12 minutes.
  • If you like a stronger garlic flavor, add 1/2 teaspoon of garlic powder to the butter mixture.
  • For added flavor, add 1 teaspoon of dried Italian seasoning or fresh thyme along with the salt and pepper before roasting.
  • This side dish pairs well with roasted chicken, grilled steak, or baked salmon.
