Make the ultimate creamy egg salad that is bright, flavorful, and perfectly textured. This easy recipe is ideal for quick lunches, satisfying sandwiches, or meal prep.

Ingredients

Scale
  • 6 large eggs, hard-boiled and peeled
  • 1/3 cup mayonnaise (use full-fat for best creaminess)
  • 1 tablespoon Dijon mustard
  • 1/4 cup finely chopped celery
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon fresh chives, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh lemon juice

Instructions

  1. Place the peeled, hard-boiled eggs on a cutting board. Coarsely chop the eggs, aiming for a mix of fine pieces and small chunks for good texture.
  2. Transfer the chopped eggs to a medium mixing bowl.
  3. Add the mayonnaise, Dijon mustard, chopped celery, fresh dill, chives, salt, pepper, and lemon juice to the bowl.
  4. Gently fold all the ingredients together using a rubber spatula until just combined. Do not overmix; you want some texture remaining.
  5. Taste the egg salad and adjust salt or pepper if needed.
  6. Cover the bowl and chill the egg salad in the refrigerator for at least 30 minutes before serving. This allows the flavors to blend.
  7. Serve your perfect egg salad on toasted bread for an easy egg salad sandwich filling, in lettuce wraps, or as a protein-packed snack.

Notes

  • For the creamiest dressing, ensure your mayonnaise is at room temperature before mixing.
  • If you want to make this a keto egg salad, skip any bread and serve it over crisp lettuce leaves.
  • You can make this ahead of time; egg salad stores well for up to four days in an airtight container in the refrigerator.
  • To get perfectly cooked hard-boiled eggs, place eggs in a pot, cover with cold water, bring to a boil, then immediately turn off the heat, cover, and let stand for 10 minutes before cooling in ice water.
