Ingredients
Scale
1 pound ground beef
1 medium onion, chopped
1 (10.5 ounce) can condensed cream of chicken soup
1 (10 ounce) can condensed tomato soup
1/2 cup water
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon dried oregano
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 (9.75 ounce) bag Nacho Cheese Doritos, lightly crushed
1/2 cup sour cream (for topping, optional)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
Stir the cream of chicken soup, tomato soup, water, chili powder, cumin, and oregano into the skillet with the meat mixture. Cook until heated through, about 5 minutes.
Remove the skillet from the heat. Stir in the cheddar cheese and Monterey Jack cheese until melted and combined.
Fold in about two-thirds of the lightly crushed Doritos into the meat and cheese mixture.
Spread the mixture evenly into the prepared baking dish.
Bake for 20 minutes.
Remove the casserole from the oven. Sprinkle the remaining one-third of the crushed Doritos over the top for a crunchy topping.
Return to the oven and bake for an additional 5 to 10 minutes, or until the cheese is bubbly and the topping is golden brown.
Let the casserole rest for 5 minutes before serving. Top individual servings with a dollop of sour cream if desired.
Notes
To prevent the bottom layer of chips from getting too soggy, mix only two-thirds of the chips into the meat mixture. Keep the rest for the top layer.
You can substitute Cool Ranch Doritos for Nacho Cheese for a different flavor profile in this layered chip casserole.
For a richer flavor, use cream of mushroom soup instead of cream of chicken soup.
