Ingredients
Scale
1 cup Medjool dates, pitted
1/2 cup raw almonds
1/4 cup unsweetened cocoa powder, plus more for rolling
1 tablespoon almond butter
1 teaspoon vanilla extract
1/4 teaspoon sea salt
2 tablespoons water (if needed)
Instructions
Place the raw almonds in a food processor and process until they form a coarse meal. Do not over-process into butter.
Add the pitted dates, 1/4 cup cocoa powder, almond butter, vanilla extract, and salt to the food processor.
Process the mixture until it comes together into a sticky dough ball. If the mixture is too dry and will not combine, add water one tablespoon at a time until it forms a cohesive mass.
Remove the dough from the processor. If the mixture is too soft to handle, chill it in the refrigerator for 15 minutes.
Scoop out small amounts of the mixture (about 1 tablespoon each) and roll them firmly between your palms to form uniform balls.
Place extra cocoa powder on a shallow plate. Roll each truffle ball in the cocoa powder until fully coated.
Store the finished Date and Almond Chocolate Truffles in an airtight container in the refrigerator.
Notes
For a different coating, you can roll the truffles in finely chopped almonds or shredded unsweetened coconut instead of cocoa powder.
If you prefer a stronger chocolate flavor, add 1 tablespoon of melted dark chocolate to the mixture before rolling.
Ensure your dates are soft; if they are dry, soak them in hot water for 10 minutes and drain them well before using.
