Make easy, crispy sausage roll-ups using puff pastry for a perfect appetizer or snack.

Ingredients

Scale
  • 1 package (14.1 ounces) all-butter puff pastry, thawed
  • 1 pound ground pork sausage (mild or spicy)
  • 1 large egg, beaten (for egg wash)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, combine the ground sausage, thyme, pepper, salt, and Dijon mustard. Mix gently until just combined; do not overmix.
  3. Unfold the thawed puff pastry sheets onto a lightly floured surface. If the pastry is thick, gently roll it out slightly thinner.
  4. Divide each pastry sheet in half lengthwise, creating four long rectangles.
  5. Divide the sausage mixture evenly into four portions. Roll each portion into a long, thin log, matching the length of the pastry strips.
  6. Place one sausage log along the long edge of one pastry strip. Brush the opposite long edge of the pastry lightly with the beaten egg wash.
  7. Roll the pastry over the sausage until the edges meet and seal firmly. Press the seam to secure it. Repeat with the remaining sausage and pastry.
  8. Brush the entire surface of each log generously with the remaining egg wash. This helps achieve a golden, crispy finish.
  9. Using a sharp knife, cut each log into 1-inch thick pieces (roll-ups). Place the roll-ups cut-side up on the prepared baking sheets, leaving about 1 inch between them.
  10. Bake for 18 to 22 minutes, or until the pastry is puffed, deep golden brown, and the sausage filling is cooked through (internal temperature of 160°F or 71°C).
  11. Remove from the oven and let cool slightly on the baking sheet before serving.

Notes

  • For extra crispiness, chill the assembled roll-ups for 15 minutes before baking.
  • Prick the top of the pastry lightly with a fork before applying the egg wash to allow steam to escape.
  • Serve with ketchup, honey mustard, or a spicy aioli for dipping.
