A recipe for making zucchini spears crispy in the oven using a Parmesan coating, avoiding sogginess.

Ingredients

Scale
  • 3 medium zucchini
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, finely grated
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for drizzling

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line two large baking sheets with parchment paper.
  2. Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into spears, about 1/2 inch thick.
  3. Place the zucchini spears on a wire rack set over paper towels. Sprinkle lightly with salt and let them sit for 15 minutes to draw out excess moisture. Pat them completely dry with paper towels. This step is crucial for crispiness.
  4. Set up a standard breading station with three shallow dishes.
  5. In the first dish, place the flour. In the second dish, place the beaten eggs. In the third dish, combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper. Mix well.
  6. Dredge each dried zucchini spear first in the flour, shaking off any excess.
  7. Dip the floured spear into the egg mixture, allowing excess to drip off.
  8. Finally, press the spear firmly into the Parmesan-Panko mixture, coating all sides evenly.
  9. Arrange the coated zucchini spears in a single layer on the prepared baking sheets, ensuring they do not touch.
  10. Lightly drizzle the tops of the coated spears with olive oil.
  11. Bake for 15 to 20 minutes, flipping halfway through, until the coating is golden brown and crispy. Serve immediately.

Notes

  • For extra crispiness, you can use an air fryer instead of the oven, cooking at 400 degrees Fahrenheit for 8 to 10 minutes.
  • If you skip the initial salting and drying step, your zucchini will likely be soggy.
  • Use finely grated Parmesan for the best coating adhesion.
