Ingredients
Scale
4 large Russet potatoes
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 cup grated Parmesan cheese, finely grated
2 cloves garlic, minced very fine
Instructions
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line two large baking sheets with parchment paper. Do not use foil.
Wash the potatoes well. Do not peel them. Cut each potato lengthwise into 8 equal wedges.
Place the potato wedges in a large bowl. Add cold water and let them soak for at least 30 minutes. This removes excess starch, which helps them crisp.
Drain the potatoes completely. Lay them out on a clean kitchen towel or several layers of paper towels. Pat them completely dry. Moisture prevents crisping.
In the same bowl, toss the dry wedges with olive oil, salt, pepper, garlic powder, and onion powder until evenly coated.
In a small bowl, mix the grated Parmesan cheese and the minced fresh garlic.
Place the seasoned wedges on the prepared baking sheets in a single layer. Do not let them touch. Use two sheets if necessary to avoid crowding.
Bake for 20 minutes on the middle rack.
Remove the sheets from the oven. Carefully toss the wedges on the sheet. Sprinkle half of the Parmesan-garlic mixture over the wedges. Gently toss them on the sheet again to coat.
Return the sheets to the oven. Bake for another 15 to 20 minutes, or until the potatoes are golden brown and crisp.
Remove from the oven. Sprinkle the remaining Parmesan-garlic mixture over the hot wedges and toss lightly one last time. Serve immediately.
Notes
Russet potatoes work best for a fluffy interior and crispy exterior.
For extra crispness, you can place the baking sheets in the oven while it preheats.
If you want a dipping sauce, a simple mix of Greek yogurt, a squeeze of lemon juice, and chives works well.
