Ingredients
Scale
2 large boneless, skinless chicken breasts, cut in half horizontally to make 4 thin cutlets
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 cup chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
1/4 teaspoon dried Italian seasoning
Instructions
Season the chicken cutlets on both sides with salt, pepper, and garlic powder.
Heat the olive oil and butter in a large skillet over medium-high heat.
Add the chicken to the hot skillet and cook for 4 to 6 minutes per side, until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Pour the chicken broth into the skillet and scrape up any browned bits from the bottom. Let it simmer for 1 minute.
Stir in the heavy cream and Italian seasoning. Bring the sauce to a gentle simmer.
Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth.
Add the fresh spinach to the sauce. Stir until the spinach wilts down, about 1 to 2 minutes.
Return the cooked chicken to the skillet, spooning the sauce over the top. Heat through for 1 minute before serving.
Notes
Serve this skillet dish over pasta, rice, or with crusty bread to soak up the extra sauce.
For a richer flavor, substitute half of the chicken broth with dry white wine.
