Ingredients
Scale
1 large head cauliflower, cut into florets
4 cloves fresh garlic, minced
4 tablespoons unsalted butter
1/4 cup heavy cream (or cream cheese for thicker mash)
2 tablespoons grated Parmesan cheese (optional)
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
Place the cauliflower florets in a large pot and cover them with water. Add a pinch of salt. Bring the water to a boil and cook the cauliflower until it is very tender, about 15 to 20 minutes.
While the cauliflower cooks, heat the olive oil in a small skillet over medium heat. Add the minced garlic and sauté for 1 to 2 minutes until fragrant. Do not let the garlic brown. Set aside.
Drain the cooked cauliflower thoroughly. This step is important to prevent a watery mash. Let the cauliflower steam dry in the empty pot for 5 minutes, shaking occasionally.
Transfer the hot, drained cauliflower to a food processor or use a potato masher. Add the butter, heavy cream, sautéed garlic, salt, and pepper.
Process or mash until the mixture is completely smooth. If using Parmesan, add it now and pulse briefly to combine.
If the mash seems too thick, add cream one tablespoon at a time until you reach your desired consistency.
Taste and adjust salt and pepper before serving immediately.
Notes
For the creamiest texture, use a food processor instead of a hand masher.
To substitute dairy, use full-fat coconut cream or unsweetened almond milk mixed with 1 tablespoon of cream cheese for richness.
Roast the garlic instead of sautéing for a milder, sweeter garlic flavor.
