Ingredients
Scale
1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
2 tablespoons olive oil
1 tablespoon Cajun seasoning blend
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 small yellow onion, chopped
2 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Season the cut chicken pieces with the Cajun seasoning, garlic powder, salt, and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
Reduce the heat to medium. Add the chopped onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
Stir in the heavy cream. Bring the mixture to a gentle simmer, stirring occasionally. Do not boil rapidly.
Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and thickened.
Return the cooked chicken to the skillet. Toss to coat the chicken completely in the creamy Cajun sauce. Cook for 1-2 minutes to heat through.
Garnish with fresh parsley before serving.
Notes
For a spicier sauce, add 1/4 teaspoon of cayenne pepper with the Cajun seasoning.
If you prefer a thicker sauce, let the cream simmer uncovered for a few extra minutes before adding the cheese.
You can substitute half-and-half for heavy cream, but the sauce will be slightly thinner.
