Ingredients
Scale
1 cup water
1 cup granulated sugar
4 sprigs fresh rosemary
1 cup unsweetened cranberry juice
1/2 cup fresh lime juice
4 cups club soda or sparkling water, chilled
Ice cubes
Extra rosemary sprigs and fresh cranberries for garnish
Instructions
Make the rosemary simple syrup: Combine water, sugar, and 4 rosemary sprigs in a small saucepan. Heat over medium heat, stirring until sugar dissolves completely. Do not boil. Remove from heat, cover, and let the rosemary steep for 30 minutes. Strain the syrup to remove the rosemary and chill completely.
In a pitcher, combine the chilled rosemary simple syrup, cranberry juice, and lime juice. Stir well to mix the base.
To serve, fill glasses with ice. Pour about 1/4 cup of the cranberry-rosemary base into each glass.
Top each glass with chilled club soda or sparkling water. Stir gently.
Garnish each spritz with a fresh rosemary sprig and a few fresh cranberries.
Notes
For an alcoholic version, substitute half of the club soda with chilled Prosecco or white rum.
You can make the rosemary simple syrup up to one week ahead and store it in the refrigerator.
Adjust the amount of simple syrup based on your preference for sweetness.
