Ingredients
Scale
1/4 cup cottage cheese (full fat or low fat)
1 large egg
1 tablespoon unsweetened cocoa powder
1 tablespoon sweetener (like erythritol or maple syrup)
1 teaspoon melted coconut oil or butter
1/2 teaspoon vanilla extract
1 tablespoon chocolate chips (optional)
Instructions
Combine the cottage cheese and egg in a microwave-safe mug or small ramekin. Blend or whisk until completely smooth. You want no visible curds for the best texture.
Stir in the cocoa powder, sweetener, melted coconut oil, and vanilla extract until the batter is uniform.
Fold in the chocolate chips, if using.
Place the mug in the microwave. Cook on high power for 60 to 90 seconds. Cooking time varies based on microwave wattage. Start checking at 60 seconds.
The brownie is done when the top looks set but still slightly moist in the center. Be careful not to overcook, or it will become rubbery.
Let it cool for 2 minutes before eating.
Notes
For a smoother batter, briefly blend the cottage cheese and egg in a small blender before mixing in dry ingredients.
If you want a fudgier texture, reduce the cooking time by 10 seconds.
Top with a small dollop of Greek yogurt or a dusting of powdered sweetener after cooking.
