Make these simple, protein-packed cottage cheese egg bites at home for a perfect meal prep breakfast.

Ingredients

Scale
  • 1 cup cottage cheese
  • 6 large eggs
  • 1/2 cup shredded cheese (Monterey Jack or cheddar)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped cooked bacon or ham (optional mix-in)
  • 1 tablespoon chopped chives (optional mix-in)

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin.
  2. In a blender or food processor, combine the cottage cheese, eggs, salt, and pepper. Blend until the mixture is completely smooth. This step is key for the creamy texture, similar to Starbucks egg bites.
  3. If using mix-ins, stir the chopped bacon/ham and chives into the blended egg mixture.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Sprinkle the shredded cheese over the top of each cup.
  6. Bake for 20 to 25 minutes, or until the egg cups are set and a toothpick inserted near the center comes out clean.
  7. Let the baked egg cups cool in the tin for about 5 minutes before carefully removing them.
  8. Store your meal prep egg cups in an airtight container in the refrigerator for up to four days. Reheat in the microwave when ready to eat.

Notes

  • For a texture closer to sous-vide, you can bake these in a water bath (bain-marie). Place the muffin tin inside a larger baking dish and pour hot water into the larger dish until it reaches halfway up the sides of the muffin tin.
  • You can substitute the bacon or ham with cooked spinach or diced bell peppers for a vegetarian option.
  • These crustless quiche cups freeze well. Cool completely, then place them in a freezer-safe bag for up to one month.
