Ingredients
Scale
12 large fresh jalapenos
1 cup prepared cornbread, crumbled
4 oz cream cheese, softened
1/4 cup shredded cheddar cheese
2 tablespoons chopped green onion
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon salt
1 large egg, lightly beaten (for binding)
1/2 cup panko breadcrumbs (optional, for topping)
Instructions
Preheat your oven to 375°F (190°C) or set your air fryer to 360°F (180°C). Line a baking sheet with parchment paper or lightly spray your air fryer basket.
Prepare the jalapenos: Slice each jalapeno lengthwise down one side, leaving the stem intact. Carefully use a small spoon or knife to remove all seeds and white membrane. Wear gloves if you have sensitive skin.
Make the cornbread stuffing: In a medium bowl, combine the crumbled cornbread, softened cream cheese, cheddar cheese, green onion, chili powder, cumin, and salt. Mix well until fully incorporated.
Bind the mixture: Add the lightly beaten egg to the cornbread mixture and stir until the filling holds together firmly.
Stuff the peppers: Spoon or pipe the cornbread mixture evenly into the hollowed-out jalapenos, mounding it slightly on top.
Optional topping: If desired, lightly press the tops of the stuffed peppers into the panko breadcrumbs.
Cook the poppers: Arrange the stuffed jalapenos on the prepared baking sheet or in the air fryer basket in a single layer.
Bake for 18 to 20 minutes, or until the cornbread topping is golden brown and the peppers are tender. If using an air fryer, cook for 10 to 12 minutes, checking halfway through.
Let the poppers cool for a few minutes before serving.
Notes
Wear gloves when handling jalapenos to avoid skin irritation.
For a milder popper, remove all white pith and seeds from the jalapenos.
If you prefer a crispier exterior, you can lightly spray the tops with cooking oil before baking.
