A recipe for savory sausage cups stuffed with cream cheese, jalapeño, and topped with cornbread, cooked until golden.

Ingredients

Scale
  • 1 pound bulk pork sausage
  • 8 ounces cream cheese, softened
  • 1 large jalapeño, seeded and minced
  • 1/2 cup shredded cheddar cheese
  • 1 package (8.5 ounces) cornbread mix
  • Ingredients required by cornbread mix (usually egg and milk)
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your smoker or grill to 275 degrees Fahrenheit.
  2. In a bowl, mix the softened cream cheese, minced jalapeño, and shredded cheddar cheese until combined.
  3. Take about 2 tablespoons of the sausage mixture and flatten it into a circle in your hand.
  4. Place a spoonful of the cream cheese mixture in the center of the sausage circle.
  5. Form the sausage around the filling to create a cup or ‘shot’ shape, sealing the edges well.
  6. Prepare the cornbread mix according to package directions, using the required egg and milk.
  7. Dip the top of each sausage shot into the cornbread batter, coating the opening and a bit of the sides.
  8. Place the shots on a wire rack set over a baking sheet.
  9. Smoke or grill the sausage shots for 45 minutes.
  10. Brush the tops lightly with melted butter.
  11. Increase the grill or smoker temperature to 350 degrees Fahrenheit or move the shots to a preheated oven at 350 degrees Fahrenheit.
  12. Cook for another 15 to 20 minutes, or until the sausage is cooked through and the cornbread topping is golden brown.
  13. Remove from heat and let cool slightly before serving.

Notes

  • Use toothpicks inserted through the side to help hold the shape during the initial cooking phase if needed.
  • For a smokier flavor, use smoked sausage instead of raw bulk pork sausage.
  • If you prefer a spicier kick, leave some seeds in the jalapeño.
