- 2 cups long-grain white rice, rinsed
- 2 1/2 cups water or low-sodium chicken broth
- 1 tablespoon olive oil or neutral cooking oil
- 1 teaspoon salt
- 1/2 cup fresh cilantro, finely chopped
- 1/4 cup fresh lime juice (about 2 limes)
- Zest of 1 lime
- Rinse the rice under cold water in a fine-mesh sieve until the water runs clear. Drain well.
- In a medium saucepan, combine the rinsed rice, water or broth, oil, and salt.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, immediately reduce the heat to the lowest setting, cover the saucepan tightly, and simmer for 15 minutes without lifting the lid.
- Remove the saucepan from the heat and let it stand, covered, for an additional 10 minutes. Do not lift the lid during this resting period.
- Remove the lid. Fluff the rice gently with a fork.
- Add the chopped cilantro, lime juice, and lime zest to the rice. Gently fold the ingredients together until evenly distributed.
- Serve immediately or let cool slightly before using in your burrito bowls.
Notes
- For a firmer texture suitable for meal prepping, reduce the liquid by 1/4 cup.
- If you use brown rice, increase the cooking time to 40 minutes and the resting time to 15 minutes.
- This recipe is naturally vegetarian and vegan.
