Ingredients
Scale
1 pound large sea scallops, patted dry
12 slices thin-cut bacon, halved lengthwise
1/4 cup fresh cilantro, finely chopped
2 tablespoons fresh lime juice
1 teaspoon lime zest
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Toothpicks, soaked in water for 30 minutes
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 Celsius). Line a baking sheet with parchment paper or foil.
In a small bowl, combine the chopped cilantro, lime juice, lime zest, salt, and pepper. Mix well to create the marinade.
Gently toss the dried scallops in the cilantro-lime mixture, coating them lightly. Let them sit for 5 minutes.
Take one half-slice of bacon and wrap it tightly around the center of each seasoned scallop. Secure the bacon with a soaked toothpick inserted through the bacon and scallop.
Arrange the wrapped scallops on the prepared baking sheet. Brush the tops lightly with olive oil.
Bake for 15 to 20 minutes, turning the scallops halfway through, until the bacon is crisp and the scallops reach an internal temperature of 145 degrees Fahrenheit (63 degrees Celsius).
Remove the toothpicks before serving.
Notes
For grilling, use medium-high heat and cook for 3 to 4 minutes per side until the bacon is done. Watch closely to prevent burning.
If you prefer an air fryer, cook at 375 degrees Fahrenheit (190 degrees Celsius) for 10 to 12 minutes, flipping halfway.
Serve immediately with extra lime wedges for squeezing.
