Make these easy cherry crumble bars featuring a buttery shortbread base and a sweet-tart cherry filling topped with a matching crumb.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1 1/2 cups cherry pie filling (or 2 cups pitted fresh/frozen cherries mixed with 1/4 cup sugar and 1 tablespoon cornstarch)
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, combine the flour, oats, brown sugar, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Press two-thirds of the crumb mixture firmly and evenly into the bottom of the prepared pan to form the base.
  5. Spread the cherry pie filling evenly over the base layer.
  6. In a small bowl, whisk the egg lightly. Mix the remaining one-third of the crumb mixture into the beaten egg until just combined. This will be your topping.
  7. Sprinkle the topping mixture evenly over the cherry filling.
  8. Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbling slightly.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  10. Cut into squares before serving.

Notes

  • If using fresh or frozen cherries, mix them with sugar and cornstarch before spreading them over the base layer.
  • For a richer flavor, substitute half of the all-purpose flour with almond flour.
  • Chill the bars for at least 2 hours before cutting for cleaner slices.
