Follow this recipe to make tender bell peppers filled with a savory mixture of ground beef, rice, tomato sauce, and topped with melted cheese.

Ingredients

Scale
  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15 ounce) can tomato sauce, divided
  • 1 cup cooked white rice
  • 1/2 cup shredded mozzarella cheese, plus 1/2 cup for topping

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a baking dish.
  2. Prepare the peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place the hollowed peppers cut-side up in the prepared baking dish.
  3. Cook the beef mixture: Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned. Drain off any excess fat.
  4. Add the onion and garlic to the skillet and cook until the onion softens, about 5 minutes.
  5. Stir in the oregano, basil, salt, pepper, 1/2 cup of the tomato sauce, the cooked rice, and 1/2 cup of the mozzarella cheese. Mix well to combine.
  6. Stuff the peppers: Spoon the beef and rice mixture evenly into the hollowed bell peppers.
  7. Pour the remaining 1/2 cup of tomato sauce into the bottom of the baking dish around the peppers.
  8. Cover the baking dish tightly with aluminum foil. Bake for 40 minutes.
  9. Remove the foil. Sprinkle the remaining 1/2 cup of mozzarella cheese over the top of each stuffed pepper.
  10. Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly and the peppers are tender.

Notes

  • For extra flavor, substitute 1/4 cup of the tomato sauce with beef broth in the filling mixture.
  • If you prefer a softer pepper, you can boil the peppers for 5 minutes before stuffing them.
  • You can prepare the filling a day ahead and store it in the refrigerator.
