Ingredients
Scale
1 sheet frozen puff pastry, thawed
2 large yellow onions, thinly sliced
2 tablespoons olive oil
1 tablespoon unsalted butter
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
4 ounces soft goat cheese, crumbled
1 large egg, beaten (for egg wash)
1 teaspoon fresh thyme leaves (optional)
Instructions
Prepare the onions: Heat olive oil and butter in a large skillet over medium-low heat. Add the sliced onions, sugar, salt, and pepper. Cook slowly, stirring occasionally, for 30 to 40 minutes until the onions are deep golden brown and very soft. Remove from heat and let cool slightly.
Prepare the pastry: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Unfold the puff pastry sheet onto a lightly floured surface.
Cut the pastry: Use a round cookie cutter (about 3 inches in diameter) to cut out circles from the pastry. Place the circles on the prepared baking sheet.
Shape the tarts: Lightly score a border about 1/4 inch from the edge of each circle using a paring knife, being careful not to cut all the way through the pastry. This will help the edges puff up.
Assemble: Brush the scored edges of the pastry circles with the beaten egg wash. Divide the cooled caramelized onions evenly among the pastry circles, spreading them within the scored border. Top the onions with crumbled goat cheese and a sprinkle of fresh thyme, if using.
Bake: Bake for 15 to 18 minutes, or until the pastry is golden brown and puffed around the edges.
Serve: Let the tarts cool on the baking sheet for 5 minutes before transferring them to a serving platter. Serve warm or at room temperature.
Notes
For the best caramelization, keep the heat low and be patient; rushing the onions results in browning, not true caramelization.
You can prepare the caramelized onions up to two days ahead and store them covered in the refrigerator.
If you prefer a different shape, you can cut the pastry into squares or use a small tart pan for a full-size tart instead of individual rounds.
